You already know your kids should eat a variety of vegetables to get the nutrition they need, but getting them to actually do it is another story. Maybe you’ve tried making smoothies, adding butter or cheese, or sneaking veggies into sauces, soups, and baked goods, but no matter what you do, they refuse to even take a bite. It’s frustrating for sure, but take heed, because you’re not alone. According to a recent survey by the International Food Information Council, and funded by Abbott, 39% of parents say picky eating is a top challenge to healthy eating. Parents also say they struggle to get their kids to eat dark green leafy vegetables (41%), other vegetables (41%), and red and orange vegetables (28%). Research shows that repeated exposures and modeling healthy habits, and cooking with your kids are really important, but serving a variety of vegetables, and trying new vegetable recipes for picky eaters can turn your kids into healthy, adventurous eaters too.
